Selected at Doddengooda Estate in Mysore, India, Kent KP9293 was originally prized for its resistance to coffee leaf rust, while retaining the classic sweetness associated with the Typica varietal.

Whole cherries are pre-fermented for 24 hours beneath black tarpaulins to enhance sweetness and body before drying slowly in the sun over 25-26 days. Dried coffee is then transferred to hermetic storage until milling. The result is a silky smooth cup, full of ripe stone fruits and a boozy richness.

Espresso

- Brew Ratio - 18g to 36g (1:2)

- Brew Time - 28 - 30 seconds

- Water Temp - 94°C

- Water Pressure - 9 bars

While the scope of the adjustments you can make this recipe will depend on your brewing machine, a rule-of-thumb for brewing our coffees as espresso is the 1:2 ratio.

Tip: Try increasing the ratio for light roast coffees.

Edelweiss Estate
The Producer

Edelweiss is a third-generation family estate, now run by siblings Neel and Kavita Vohora. Perched at 1,600–1,850 metres on the edge of the Ngorongoro Conservation Area – a UNESCO World Heritage site - the farm borders the entirely indigenous Ngorongoro forest.

The Vohoras actively protect the surrounding ecosystem, preserving bushland corridors and maintaining native tree cover so the farm can sit in harmony with the wildlife and natural ecology around it. Extreme variations in topography, naturally rain-fed agriculture, and a patchwork of microclimates give Edelweiss coffees their remarkably complex flavour profiles – a result of Tanzania’s high-altitude volcanic terroir.
