Grown in the high-altitude areas around Jaén, this coffee benefits from a humid high-jungle climate, rich volcanic soils and plenty of tropical rainfall.
Ripe cherries are hand-picked and processed on the smallholder producers’ individual farms using hand-pulping machines, before being fermented in tanks and dried on patios or raised beds. Once processed all lots are sent to Falcon’s production facility, Mikan, in Jaén.
The washed process keeps things clean and balanced, highlighting the Tabi variety’s characteristic sweetness, citrus acidity and smooth body. Expect orange and vanilla, with a sticky sweetness that carries through the cup.

While the scope of the adjustments you can make this recipe will depend on your brewing machine, a rule-of-thumb for brewing our coffees as espresso is the 1:2 ratio.
Tip: Try increasing the ratio for light roast coffees.

After processing and drying their coffee on-farm, producers deliver the parchment to Falcon’s warehouse in Jaén, where it is graded, moisture tested, roasted and cupped
Farmers receive immediate feedback on the quality of their coffee, along with a cup score and offer price, helping them understand how their work translates into the final cup. This forms part of Falcon’s Blueprint Project, which focuses on greater transparency throughout the supply chain and creating more value for the households producing the coffee.
